The first restaurant in Florence for Sri Lankan cuisine, the great island also known as Ceylon which extends to the southeast of the Indian peninsula, takes its name from the most common street food in that country: the kottu, which consists of pieces of bread not leavened finely chopped and sautéed with vegetables, eggs and other ingredients of your choice.

Rice and lentils are also always present, along with curry, sambar and vegetable mixes, most of the dishes of Sri Lankan cuisine: rolls, fried ravioli, fish and meat seasoned with a great variety of sauces.

The links with southern Indian cuisine are strong and evident, although here more delicacy and lightness prevail in its flavors and there is an intense but balanced use of coconut milk and tropical fruits.
