What you will find

Would you like to learn to make authentic, fresh Italian pasta? Our chef will guide you step-by-step to prepare classic Italian dishes, sharing his secrets gained from years of experience. Your lesson will finish around the table, savoring your creations paired with a glass of good wine.

FULL PROGRAM

The classes take place in Riva’s living room, in the heart of our “home,” and last two to three hours followed by the meal, served in our living room or in our garden, under the shade of the veranda or under the poplar trees with a view of our swimming pool.

Michele’s classes will teach you how to prepare traditional homemade pasta, so you can try your hand at recreating these delicious dishes in your own home. The first step is the selection of high quality, authentic ingredients, with particular attention to local sourcing. Afterwards, chef Michele will tell you about the correct usage of the ingredients and some of the secrets he uses that will help you in your preparations. You will also learn proper knife skills and cooking times. We will also create the accompanying sauces and fillings in the case of ravioli or tortellini.

Sample menu:
  • Caramelized goat cheese with zucchini and traditional balsamic vinegar of Modena
  • Tagliatelle with fresh basil pesto
  • Ricotta and spinach tortelli with butter and sage
  • Vanilla yogurt mousse with strawberries and apple cider vinegar

This class is suited for anyone who wishes to “get their hands dirty” and have fun while learning about Italian food.

Anyone can participate in our classes. Let us know if you have any special requirements, such as gluten-free pasta, or vegan, vegetarian or egg-free recipes. We would be happy to create a class perfectly suited for you!
